Dimanche à la rabasse / Truffles on sunday

La truffe est constituée en haut pourcentage par de l’eau et par des sels minéraux absorbés du sol par les racines de l'arbre avec lequel elle vit en symbiose, principalement celles du chêne et du saule. Le type d'arbre auprès duquel elle se développe lui détermine couleur, saveur et parfum. La meilleure des quatre variétés gastronomiques, "tuber melanosporum" est appelée le "diamant noir".

The truffle consists of a high percentage of water and mineral salts absorbed from the soil through the roots of the tree with which it lives in symbiosis, mainly of oaks and willows. The specimen of tree where it growes determine colour, flavour and aroma. The best one among the four gastronomic varieties, "tuber melanosporum" is called the "black diamond".
